This wee chai recipe from the fab and well recommended book GROWN and GATHERED, has got to be our favourite for this winter. Willa has it on the go in a big pot which lasts her a few days. So if you need a break from all that yummy cacao. This is a favourite go to.

Our fav’s are the Amber Chai and the Sunhouse Chai (believe me - we’re had a few chai’s in our time - so we know a good one!)
Chai made from scratch with all of its essential ingredients - this is something that makes our home, feel like home. As it starts to get cold, and throughout winter, we often have a pot of this on the stove to keep us warm and share with friends.
It is full of warming spices and decongestant herbs. The key to real chai flavour is making sure that you get the mixture to a rollicking boil just before straining - that heat changes everything. Do this and you will be a chai master!
What you will need
Makes 1 litre (serves 4-6)
Time - 30 minutes
A knob of ginger
8 cardamon pods
5 star anise
2 cinnamon sticks
3 cloves or a third of a teaspoon of ground cloves
1 tsp ground cinnamon
a pinch of unrefined salt
600ml milk of your choice (oat mylk is awesome!)
1 tbsp unrefined sugar or honey
3 tbsp black tea leaves
How to make
Place all spices and salt in a saucepan with 600ml of water and bring to the boil. Reduce the heat, cover and simmer for 15 minutes.
Add the remaining ingredients to the pan. and slowly bring to the boil over a medium heat, stirring occasionally to avoid sticking. Bring to the boil and then reduce the heat and boil gently for 1 minute. Remove the pan from heat and strain.
Serve and enjoy, or place in the fridge to cool and serve as iced chai. If this isn’t sweet enough, feel free to add a natural sweetener.
